Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium-textured clayey, shallow with good presence of skeleton.
Cultivation: Sapling of an age not less than 50 years (4,500 per hectare).
Vinification: Manual harvest of the grapes with slight over-ripening; destemming-crushing, cold pre-fermentation maceration and subsequent start of alcoholic fermentation with indigenous yeasts. Final drawing off with soft presses.
Aging: Malolactic fermentation in steel and subsequent stay in French oak barrels for 12 months.
Organoleptic characteristics: Ruby red color with purple reflections; intense and complex bouquet with fruity notes of plum and jam and spicy tertiary hints that recall vanilla and liquorice; on the intense palate, of great structure and softness, long finish.
Pairings: Robust first courses, red meats and game. Meditation wine.
Serve at: 18 ° C.
