The grapes were picked slightly overripe, in order to enhance their phenolic potential. After the pressing, the fermentation took place in steel tanks at a temperature not exceeding 26 ° C. The maceration, managed with soft pumping over and delèstage to carry out a gradual and balanced extraction, was continued for approx. 15 days. After racking the wine is passed directly into mainly French oak barrels, where it underwent malolactic fermentation, remaining 15 months before being bottled. A further 24 months of aging in bottle followed.

Bocca di Lupo is the spark that ignited Tormaresca's entrepreneurial and oenological dream. The desire to rediscover a noble varietal such as the Aglianico offering a different but equally authentic interpretation has led a project along fifteen years. The full maturity of the vineyards has allowed us to produce deep grapes suitable for the production of a wine with great aging potential. Il Bocca di Lupo represents the culmination of a journey of research and work that expresses the style we had dreamed and imagined when, in 1998, the adventure of Tormaresca began.
