The grapes were picked slightly in the third week of September, in order to enhance their phenolic potential. After crushing, fermentation took place in stainless steel tanks at a temperature of 27 ° C. The maceration, with soft pumping over and delèstage in order to carry out a gradual and balanced extraction, was continued for 15 days. After racking the wine is passed directly into French and Hungarian oak barrels, where it underwent malolactic fermentation, remaining 12 months. A further 12 months of aging in bottle followed.

AROMA: floral (violet, pink), red fruit (black cherry, mulberry), spicy notes (licorice, anise, cinnamon, cloves).

THE NEGROAMAR IN PURITY
The pure Negroamaro from Tormaresca takes the name of the Salento estate where it is produced. The farm is reached along a path that winds through pine forests and olive groves and its name derives from the small church that rises outside the walls. The chapel dedicated to S. Pasquale a Maìme (district of the area) arose to guarantee to the peasants a place where they could pray during the week when they were away from home and tells so much of what were the values and rhythms of the past. The wine stands out for the splendid contrast between powerful smell and a soft and elegant palate.
