Vines: 85% Negroamaro, 15% Malvasia Nera di Brindisi.
Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.

oil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (5,000 vines per hectare).
Harvest: Second half of September.
Vinification: Thermo-controlled maceration of about 10 days followed by alcoholic fermentation with selected yeasts.
Aging: In steel.
Organoleptic characteristics: Color: bright ruby red with garnet hues. Bouquet: intense, with hints of cherry and plum, spicy, with notes of Mediterranean herbs; on the palate: a full-bodied wine, with a pleasant freshness in the finish, ready to drink.
Pairings: Cold cuts and cold cuts, robust first courses, red meats and cheeses.
Serve at: 16-18 ° C.
