Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (4,500 vines per hectare).
Harvest: Second half of September.
Vinification: Thermo-controlled maceration of about 10 days followed by alcoholic fermentation with selected yeasts.
Aging: In French oak barrels for 6 months.
Organoleptic characteristics: Intense ruby red color; complex aroma due to ripe red fruits and spices; very robust body wine, with a pleasantly soft attack and long persistence.
Pairings: Red meats, roasts with elaborate sauces and medium-aged cheeses.
Serve at: 16-18 ° C.
