Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (4,500 vines per hectare).
Harvest: First half of September.
Vinification: Thermo-controlled maceration of about 10 days followed by alcoholic fermentation with selected yeasts.
Aging: In French oak barrels for 6 months.
Organoleptic characteristics: Very intense ruby red color with garnet streaks; rich aroma of ripe red fruit, cherries, berries, some cinnamon. A wine with a remarkable structure, enriched by a velvety tannic texture, it remains for a long time with a pleasant aftertaste.
Pairings: Robust first courses, red meats and game, hard cheeses.
Serve at: 16-18 ° C.
