Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (4,500 vines per hectare).
Harvest: First week of September.
Vinification: Partial racking of the Primitivo grape must after a few hours of maceration, followed by white fermentation.

Organoleptic characteristics: Soft pink color; intense and persistent scent of Mediterranean maquis, with hints of cherry and raspberry; fresh and elegant wine, balanced on the palate.
