Grapes: 80% Chardonnay, 10% Bombino, 10% Minutolo. Area: San Marzano, Salento, Puglia. At about 150 meters above sea level.
Soil: Mixed, tending to calcareous.
Harvest: End of August.
Vinification: Obtained from softly pressed whole grapes, using only the first fraction of flower must (55%) which is then fermented at low temperature. The wine obtained is further processed in an autoclave using the "Charmat" sparkling wine method. After foaming, it remains for about a month in an autoclave on its own yeasts.
Aging: In bottle at a controlled temperature.
Organoleptic characteristics: Color: straw yellow with clear green reflections. Fine and persistent perlage. Bouquet: intense, pleasant and particularly fruity with white peach and rich in floral notes of elderflower and aromatic sage. Palate: fresh and lively, round, well balanced, with remarkable personality and pleasantness.
Pairings: Excellent as an aperitif, with hors d'oeuvres and seafood first courses.
Serve at: 6-8 ° C.
