Grape variety: Vermentino
Area: Brindisi, Salento, Puglia. At about 100 m above sea level. The area is characterized by a temperate microclimate due to the proximity of the sea.
Soil: Shallow, of medium texture, predominantly sandy.
Cultivation: Guyot (5,000 vines per hectare)
Harvest: Last week of August.
Vinification: The de-stemmed grapes are kept in contact with the skins for a few hours before being pressed, so as to extract the maximum aromatic potential from the skins. Fermentation takes place in steel at 15 ° C for 13-15 days, preserving intact bouquets and natural aromatic profile of the grapes.
Aging: In steel for 5 months.
Aging capacity: A wine that keeps its organoleptic characteristics intact for 3 years.
