Grape variety: Fiano.
Area: Hilly area north of the province of Taranto.
Soil: Medium-textured clayey, shallow and with good presence of skeleton.
Cultivation: Espalier (4.000 vines per hectare).

Vinification: Cold maceration in press for 6-8 hours; subsequent soft pressing of the marc; cold static settling and alcoholic fermentation at 11 ° C.
